Foodie Friday: Curry Seafood Stir Fry

285260036_f99476c00b_zPutting together a healthy gourmet dinner doesn’t have to take all day. However coaxing complex flavors out of a dish in a short amount of time can be a challenge.

Curries are a great way to pack a dish with fantastic flavors and it can be prepared in a short amount of time if you choose the right blend and method for preparation. Stir frying curry is a fast-moving process that requires timing. The key is to have all of your ingredients measured and ready to go.

Personal preference goes a long way in regards to spiciness and intensity of flavor. Feel free to add more chili flakes or some ground cumin if you like to walk on the wild side. If you aren’t into the spice you can omit the chili flakes and reduce the amount of garam masala spice by a half tablespoon or so. If you don’t like seafood you can replace it with more vegetables and even tofu for a delicious vegan option.

Foodie Friday: Broiled Steelhead with Brussel Sprout Hash

Being an avid outdoors-man, I enjoy nothing more than spending a lazy afternoon casting my line and breathing fresh country air deep into my lungs. I often find myself daydreaming about my next fishing trip, and its delicious spoils. Fish is the kind of food that makes me feel truly connected to the world. I get completely satisfied feeling after eating a nice grilled trout or smoked salmon and I don’t think I’m alone.

Foodie Friday: Pack a Picnic Brunch with Gravlox!

Oh, August! A great time to spend with your friends and family, and brunch is a fantastic daytime, community meal: breakfast for some, lunch for others, but always delicious and on everyone’s schedule.

Instead of having it inside or scrambling to find a brunch spot with a patio, why not bring the party outside? Laying down a blanket on the beach or in the park is as good a spot for brunch as any. While you’re at it, why not enjoy some great bluegrass music or live Shakespeare or perhaps some French Opera? Here in the Northwest, fresh salmon is bountiful, especially this time of year, and we find any excuse to eat it whenever we can. This Gravlox recipe, from our resident foodie Patrick, is a little less salty than your standard cured salmon, letting the flavor of the fish shine through. The whole process takes around 36 hours, but you can make it in advance, as it will keep for a few days in the fridge.
